Identity Theft, Pizza, Burger, Spain

There is definitely something wrong! I know it! Lately, things are going quite differently around here. Just today, we did our spring cleaning, while winter just started a few days ago. My mind is off the track. Yes, you know, but this time it's even worse. I think I lost my identity. Someone robbed it. While I was thinking about writing something for the blog after such a long time and for not having just two entries for the whole year, the thoughts didn't come up in German, no, not even in English, but it was Spanish. I guess Rodrigo or Rodriguez is taking over again ...

Panko Fried Brie with Lavender Mushrooms

While the weather is not as it’s best these days, we already had some quite pleasant days.
It’s best not to expect perfection all the time, because you are only going to be disappointed. For sure, you don’t want that. Rather concentrate on the small things of beauty always around you, appreciate that.

Then you can find enjoyment more often …
… like in a quick and simple meal with not much fuss about it. Among the simple things I enjoy is cheese. I wouldn’t want to imagine a life without cheese. If I would have to choose between cheese and meat – which one to go without, I would select the meat to go without rather than the cheese.
But, I don’t have to choose. However, for the following meal I have chosen to go without meat and with cheese … with Brie to be more precise. So we are having Panko Fried Brie with Lavender Mushrooms …

Somehow I like lavender, so I try to look for new ways to carefully introduce it into cooking. See, whether it works today.
Ingredients:
Olive oil
200 g mushrooms
2 cloves of garlic
Salt, chilli
Juice of half a lemon
1 tsp. lavender buds
Knob of butter
1 Brie (200 g)
1 egg
Panko (or other breadcrumbs)
Rosemary
Method:
Use two pans to get both elements ready at the same time. I used a griddle pan for the Brie.
Well then, how do we go about?
Heat up some olive oil for the mushrooms.
Prepare the brie by tossing it around in the whisked up egg. Next you have the panko ready together with some salt and finely chopped rosemary. Try as best as you can to coat the Brie with it.
The mushrooms start rolling in the pan. Season them with salt and a bit of chilli if you like.
The Brie is in the other pan. You turn it, when you think the time is right after a few minutes. If it starts oozing away in your pan, you’ve lost and evidently waited too long.
Add the lemon juice and the lavender to the mushrooms and let them continue in the heat. Finish it off with a knob of butter.
When you have done everything right, both the Brie and the mushrooms are finished at about the same time. So, serve it up …

Have some bread on the side and … whatever makes you happy. Fine, here we have another use of lavender in cooking. As I felt, the taste was good and I enjoyed it.

Chicken Macaroni Cheese Apokalypse

Yes, you also know it doesn’t look that good, is not too healthy, will have too much calories and … but you want it, because it brings you comfort and tastes yummy.
We all know such dishes.
Today – using some leftovers from the indecent looking chicken (sorry, if there were any disturbing or offensive images in my last post) – I’ll bring you my Chicken Macaroni Cheese Apocalypse …

So, what do you associate with ‘Apocalypse’? Death and destruction?
Wrong!
If you know your Greek, you’d say ‘revelation’, for that is what the Greek work apocalypses means. So … the question now is, will this Chicken Macaroni Cheese be a revelation?
Let us see! For sure it will be very different from what you had before. Hm … yes … eh … well, different.
You know, you want it!
Come and get it!
Ingredients:
200 g cooked chicken meat, shredded (yes, I used it from the beer butt thingy)
200 ml cream (I would have used double had I any)
200 g grated cheese (sadly I just had 100 g)
100 g bacon (cubes, stripes, whatever you fancy … it’s your life)
50 ml chilli sauce (anyone you like)
50 ml tomato puree
2 cloves of garlic, finely chopped
Some basil leaves, torn
Salt and pepper (because we want it)
250 g macaroni
Method:
Go, get your macaroni boiling. Pre-heat the oven to 180 °C.
Grab yourself a proper ovenproof dish (20 x 20 cm did for me) and go for it. Now that will all sound a bit simple from here on … because it is: Throw the ingredients into your ovenproof dish!
While the macaroni might not be ready yet, your dish might look like this …

With all that bringing your water for the macaroni to oil, even though using a kettle to help you, up to here things are fast and you really have to wait for the macaroni.
No worries, though, once the water is ready, the macaroni will be in under 10 minutes. Rinse and add …

That looks like, it could go to the oven and so it does …
By that time I already knew, I didn’t have a sufficient amount of cheese in it. Another remedy would have been to add a ball of mozzarella, but … I didn’t. Just saying!
Oh, yes, 20 minutes in the oven had to do for me, but I reckon 30 minutes will also do no harm.
At this point, things will look like this …

Yes, I know, it doesn’t look spectacular and it’s not much worse adding this picture at all. Hey, you know what? I do it anyway, because I’m the boss here. No I don’t have any issues in connection with being or not being the boss. I have other issues, but I try to suppress them for as log as possible, at least until I am finished here. You really don’t want to read any about it.
You know, you want something else. So let’s get on with it. What about putting on a bit of garnish?

That should do. I asked an expert about it, although she didn’t knew, what I would be using it for. A little bit of basil can go a long way. In our case it goes here …

Well, fine, you can also place it on the individual serving as I did in the opening. If you can’t resist, you can also drizzle over some extra virgin olive oil over it. Just saying! It’s your life!
Now, is that a revelation or just death and destruction?
Think about it! Answer correctly, if you want to live! It’s your life!
Scared? Sorry, I just have to work on making proper threats, but you know that I know how to find you … ah, just kidding, I wouldn’t really tell or show what I am capable of.

#Foodfitness with Beef and Cheese Empanadillas

It is about time I start putting up some more food here on our blog. It has been quite a while of inactivity, which doesn't mean I haven't been active. In fact I have been very active and I have been doing quite some exercise, enjoying it together with my beautiful wife. Life is really good!
Now, though, it is time again for some other kind of exercise again ... food fitness.
Let's have some Spanish food today, which you could also use for a picnic, if the weather so permits.



Ingredients:
450 g flour
1 tsp. baking powder
1 tbsp. butter
1 egg
1 tsp. honey
pinch of salt
lukewarm water
1 onion (finely chopped)
some chillies (to your liking, finely chopped)
2 cloves of garlic (finely chopped)
500 g minced beef
smoked paprika
salt, pepper
2 tbsp. tomato puree
basil, rosemary, mint
3 spring onions (chopped in rings)
150 g grated cheese (whatever kind you fancy)
30 g sultanas
oil for frying

Method:
First of all we go for the dough, setting the tone for the whole thing, putting some energy in the preparation, for there will be much energy in the consumption as well, although I am not quite sure whether you want to hear it.
Put the flour with the baking powder in a bowl, rub in the butter. Then add the salt, honey and egg. Knead the dough in a fitness-like fashion adding as much of lukewarm water as it needs to bring the whole dough together.
Then let the dough rest for at least 30 minutes. In case you also need that rest, I guess you have to give it some more time. Otherwise you can you the time wisely to already prepare the filling.
You start off with the onions in a large pan, let the chillies and the garlic join. After the onions are translucent you can put in the meat and season it with salt, pepper and the smoked paprika. Once the meat has gained sufficient colour you can add the tomato puree and go on frying as long until it is all relatively dry. We don't want the filling too wet to cause any problems.
Just when it is all ready that far, turn off the heat and add the basil, rosemary, mint, spring onions, cheese and sultanas. It might look a little bit like this ...



You have some time for it to cool off a bit. That will be the time to prepare the individual empanadillas and have some extra exercise. If you still feel you need more exercise, do some push-ups, squats or crunches later on, but here we go with good old food fitness ...



Try to make it thin. This way you will enjoy the filling much later when all is finished. Give it your all. You want to feel those muscles in yours so you can actually say you have done some real exercise. Get some round shapes out of the dough for the final empanadillas. We got a special tool for it here so it will work out perfectly with the shape and sticking in the filling.
Give every circle of dough, we had 15 in the end, a teaspoon of filling or a little bit more, as your conscience permits and as you will be able to seal them properly afterwards. We don't want any filling to exit while frying. We only want to let the filling exit in your mouth while eating.



If it looks like this you might be doing it right. To ensure they are securely shut, you can use a fork to seal them well.
Then enjoy the time for frying the empanadillas in sufficient oil and hopefully they are securely shut. I didn't do it so well, when I tried it the other week, but this batch went perfectly well without incidents ... for my wife was helping to make it happen just fine.



Now the only thing that remains is enjoy your empanadillas with some salad and a beer ... any kind of beer. It doesn't need to be Spanish, although I wouldn't mind a bottle of Estrella de Galicia.
We hope you had enough exercise preparing the empanadillas. As for my part I feel like I still have to do some more exercise. These days I am kind of crazy about doing some exercise. That's not bad, after all the body feels a lot better when it is filled with muscles and not with ... anyway, I don't want to suggest anything here, but just that I am always going to enjoy some good food exercise, when it also leads to some tasty results. It would really make me feel bad, if I would put in all the effort in preparing  and eating if it wouldn't be worth it. 
In this very case here of the empanadillas we can assure you that it was absolutely worth it and we are going to enjoy it any time.

Burn a Little - Bean and Feta Enchiladas and Steak

You can’t mess with time. Even if you could go back in time to change things you have done in the past, things will most probably end even worse.
What you could do, though, is a trip on memory lane, thinking about the things that you did and that happened and if you are clever enough, you could also learn from your mistakes. Or you could rediscover things you liked to do.
Anyway, today we will have at first some prawns and later something Mexican. After all we want some food. Some time ago, I bought a bag of Panko – Japanese breadcrumbs. I saw a dish on television – Panko Fried Prawns. For a long time I wanted to try it. Now I did.

Together with some chilli sauce it’s a lovely snack.
Side note: Just keep an eye on how much Panko Prawns you have going in the hot oil at the same time. If you use too many, the oil might just … eh … bubble over and spread on your oven top and … who knows what mayhem that might cause there.
Now we can go on with some Mexican food ...
Bean and Feta Enchiladas and Steak

The original idea was to make some vegetarian enchiladas, which indeed happened, but I felt I needed some more food, so I added the steak to the side. While the recipe mainly focuses on the Bean and Feta Enchiladas, I will mention a few things regarding the steak as well.
Ingredients:
Wheat tortillas
Creme fraîche
Chilli Sauce:

A splash of olive oil
1 clove of garlic, finely chopped
1 small onion, finely chopped
1-3 dried red chillies, finely chopped
400 ml tinned tomatoes
400 ml vegetables stock (or chicken stock for non vegetarian)
1 tbsp. dried oregano
1 tsp. sugar
A splash of red wine vinegar
Enchilada Filling:
A splash of olive oil
1 small onion, finely chopped
140 g sweet corn
1 red or green capsicum, chopped
250 g kidney beans
Salt, pepper
Bunch of parsley, chopped
200 g feta cheese

Method:
First of all, we need to do our own chilli sauce. Start in a sufficiently sized pan with a splash of olive oil at medium temperature.
Chuck in the garlic and the onion and have them work in the pan until translucent. Then add the chillies, the tinned tomatoes, the vegetable stock, the oregano and the sugar.
Bring it all to the boil and leave to simmer.
Now you have plenty of time to prepare the filling for the enchiladas.
Somehow, we start in a similar way, here – another pan and another splash of olive oil at medium heat. Toss in the onion and … you know … until translucent.
Add the sweet corn, capsicum and kidney beans. Season with salt and pepper and let it all simmer for a while until the vegetables have softened a tiny bit.
Remove the content of the pan to a bowl and let it cool down slightly. Then mix in the parsley and the feta.
Check the chilli sauce. If you where not super fast with the filling, you can remove the sauce from the heat now. If you don’t like all the chunks of onion and tomato in your sauce, you can pass the sauce through a sieve.
Get yourself an oven-proof dish, that will hold at least five enchiladas. Lightly oil it.
Then get yourself a plate. Place a wheat tortilla on it and spoon a bit of the chilli sauce on it. Spread the sauce onto the tortilla. Place a part of the filling on the tortilla, roll it up and place it in the oven-proof dish. Pack those enchiladas all nice and tightly in the dish. When all enchiladas are in the dish, pour over the remaining chilli sauce and transfer the dish to the oven for about 30 minutes at 180 °C.

Meanwhile you could prepare the steak, if you wish to have it.
Have some butter in a pan and cook the steak to your liking in it. Once you have removed the steak from the pan and leave it to rest, you have some pieces of tomato and some stripes of capsicum go into the fat. Season them with salt and pepper.
When everything is finished, you can plate up.
Place the tomatoes and capsicum first, the steak on top of it and some roasted onions on top of that (figure out yourself how to get those onions).
Put one enchilada on the side. You can garnish it with some chopped up parsley and add also a spoon of creme fraîche on the side to mellow the effect of the chilli sauce.
Enjoy!
Of course, I used three dried chillies in the sauce, but I didn’t feel it so much. So, don’t be afraid. While the chilli sauce itself might be quite hot, you won’t feel it so much in the finished product.
Lovely! I enjoyed my meal very much and I reckon and I keep on saying, I need some more Mexican food in my life and ... apart from that hot food will help you to burn and by that I don't just mean that it will burn in your mouth, but it could also aid you in burning off some fat you might not like in your body. I guess it always works for me.

Paprika Beer and Beef Goulash

What are we doing today?
The same we do every day – we take over the world!!!
Really? Would it be worth it? Nah, it's better to be satisfied with what you have. It's more worth ging for something else ...
For today, I have selected this …

That would be some kind of beef goulash with paprika and beer or … hm … eh … well, let’s call it Paprika Beer and Beef Goulash.
Let’s do it then, if I still get it right …
Ingredients:
A knob of butter
500 g beef, cubed
1 large onion, chopped
3 cloves of garlic, chopped
1 red bell pepper, cut
1 red chilli, chopped
300 ml lager
500 ml beef stock
Salt, pepper, smoked pepper
Method:
So, what are we going to do first? I suppose it goes somewhat like this …
Melt the butter in a large pan at medium heat. Then seal of the beef in the pan. Once you have done that, briefly remove the beef from the pan. I’ll tell you, when it goes back.
Then chuck in the onion and let them go until translucent. Toss in the garlic, the bell pepper and the chilli.
What’s next? Yes … eh … hm, why not add the beef back to the pan and season with salt, pepper and smoked paprika.
Now we are almost there … well, it will need some time, but there are not many steps left. Therefore pour in the beer and the beef stock. Bring to the boil and let simmer for … until the beef is tender.

Yes, go for it. Right, it will still take a while, but, no worries.
Meanwhile you could think about what you want to have together with it. Maybe some lovely bread and an even lovelier salad. It’s just a suggestion.
Whatever the case … I think … I enjoyed it.

What else am I going to do with this post?
I have no idea ... although there would be tons of options, which on the other hand make thinks complicated again, but I think I could have something to eat. That always makes sense, doesn't it?
Paprika-, Bier- und Rindergulasch
Zutaten
In kleines Stück Butter
500 g Rindfleisch, gewürfelt
1 große Zwiebel, gehackt
3 Knoblauchzehen, gehackt
1 rote Paprikaschote, klein geschnitten
1 rote Chilli, gehackt
300 ml Bier
500 ml Rinderbrühe
Salz, Pfeffer und geräucherter Paprika
Zubereitung
So, was machen wir als erstes? Gut, ich denke, es läuft folgendermaßen …
Die Butter bei mittlerer Hitze in einer großen Pfanne zerlassen. Dann die Rindfleischstücke rein und von allen Seiten anbraten. Wenn das erledigt ist, das Fleisch kurz aus der Pfanne entfernen. Ich sag dann bescheid, wenn es wieder rein kann.
Nun die Zwiebel reinwerfen und sie glasig dünsten. Den Knoblauch, die geschnittene Paprika und die Chilli dazugeben.
Wie geht’s weiter? Ja … äh … nun, warum nicht das Fleisch zurück in die Pfanne geben und das ganze mit Salz, Pfeffer und Paprika würzen.
Jett sind wir schon fast fertig … nun, es wird zwar noch eine Weile dauern, aber es sind nicht mehr viele Arbeitsschritte übrig. Daher nun das Bier und die Rinderbrühe angießen, alles zum Kochen bringen und köcheln lassen … bis das Rindfleisch schön zart ist.
Dann irgendwann ist es Zeit zum Essen und man könnte es so servieren, wie auf den Bildern oben gezeigt … oder man hat noch eine andere tolle Idee.

The Spicy Side of Life - Chicken Rendang and Nasi Minyak

I don’t know whether I am back in business, but I try. Today I had that wonderful feeling again … of hot and spicy food slightly heating me up from the inside.

I had some Chicken Rendang and Nasi Minyak. 
As it was my first step into the direction of Malay cuisine, I had to do some research. Usually I go about by checking Wikipedia and then reading through the different dishes. I found a few other things I would love to try, like for example Murtabak, but that has to wait for a while.
I set my eyes on Nasi Minyak, rice flavoured with ghee and some dry spices and … you will see later. The description said, it is usually eaten with Rendang.
The most traditional way of doing that dish is with buffalo meat. As I don’t have it and I didn’t want to try getting it, I settled for chicken, which is also quite common these days.
So, don’t be afraid of the heat or the colour (you will see later, why it has roughly the same colour), we have means and ways to reduce the heat.
Now, let’s go for the Chicken Rendang first.
Chicken Rendang
Ingredients
1 tbsp. ghee
500 g chicken breast, cut into small chunks
1 tsp. turmeric powder
Salt
2 shallots, finely chopped
2 cloves of garlic, finely chopped
Thumb-sized piece of ginger, finely chopped
1 stalk of lemongrass, finely chopped
1 dried chilli, finely chopped (less seeds, less heat)
Some water
400 ml coconut milk
A hand full of fresh coriander
Method
Melt the ghee in a pan. Then fry the chicken pieces together with the turmeric and a bit of salt.
Bash the shallots, garlic, ginger, lemongrass and chilli together in a mortar, adding a bit of water to make a paste – kind of.
Remove the chicken from the pan and set aside. In the same pan, fry now the paste you just made.
Now add the coconut milk and the chopped up stalks of the coriander. Bring this to the boil and leave to simmer.
At some point add the chicken back and continue simmering until the sauce thickens.
Just prior to serving, add the coriander leaves and check the seasoning whether you need more salt.
Serve the Chicken Rendang together with the …
Nasi Minyak
Ingredients
A mug of basmati rice
Two mugs of water for steaming the rice
1 tbsp. ghee
A hand full of cashew nuts
1 cinnamon stick
1 star anise
4 cardamom pods, cracked open
1 shallot, finely chopped
1 red chilli, finely chopped (mind the seeds)
1 tsp. turmeric
Another mug of water
A hand full of peas (frozen, if you like)
A hand full of fresh coriander
Salt
Method
Add the mug of rice and the water into a pot and bring to the boil, while the lid is open. Then put on the lid, reduce the heat to a minimum and leave for 20 minutes.
Fork through the rice to loosen it up a bit, if you like and then set the rice aside.
Melt the ghee in another pan and roast the cashews. Then remove them from the pan.
Toss the cinnamon stick, star anise and the cardamom into the pan and fry them.
After that add the shallot, chilli and the turmeric. Let them all together enjoy some heat.
At this point it’s time for the rice to return. Add them to the pan together with some water.
While you are at heating things up, add the peas as well and finally the chopped up coriander leaves and the cashews.
Serve right away – as I already said – together with the Chicken Rendang. Well, they have both turmeric in it, so it’s not too much contrasting in terms of colour on the plate, but it tastes luvly.

Hähnchen Rendang und Nasi Minyak
Heut ist es mal an der Zeit für malaysische Küche. Das habe ich bis jetzt noch nicht ausprobiert. Also wird es mal Zeit. 
Insgesamt habe ich zwei Chillies verbaut. Es war trotzdem leicht scharf und aufwärmend. Das ist auf jeden Fall gut, wenn es wieder kälter wird – oh nein, der Winter kommt.
Falls man nicht so auf Schärfe steht, wäre es vielleicht angebracht, die Samen der Chillies zu entfernen. Was soll’s immer her mit der Schärfe.
Hähnchen Rendang
Zutaten
1 EL Ghee
500 g Hähnchenbrust, in kleine Stücke geschnitten
1 TL Kurkuma
Salz
2 Schalloten, feingehackt
2 Knoblauchzehen, feingehackt
Daumengroßes Stück Ingwer,feingehackt
1 Stengel Zitronengras, feingehackt
1 getrocknete Chilli, feingehackt
Etwas Wasser
400 ml Kokosmilch
Eine Hand voll frischer Koriander
Zubereitung
Das Ghee in der Pfanne schmelzen. Dann darin die Hähnchenstücke anbraten mit dem Kurkuma und etwas Salz zusammen bis das Fleisch etwas Farbe bekommt – und damit meine ich nicht die Farbe von dem Kurkuma.
Die Schalotten, Knoblauch, Ingwer, Zitronengras und Chilli in einen Mörser geben und dann ordentlich zusammenstampfen. Ein wenig Wasser dabei, so dass eine Paste entsteht – oder so ähnlich.
Das Hähnchenfleisch aus der Pfanne nehmen und statt dessen die Paste hineingeben. Das Fleisch erst mal zur Seite stellen. Die Paste anbraten.
Dann die Kokosmilch und feingehackte Korianderstengel hinzugeben. Das ganze zum Kochen bringen und köcheln lassen.
Irgendwann kommt dann auch das Fleisch zurück in die Pfanne und weiterköcheln lassen bis die Sauce etwas dicker wird.
Kurz vor dem servieren noch die Korianderblätter hinzugeben und kontrollieren, one noch etwas Salz nötig ist.
Das Hähnchen Rendang servieren zusammen mit …
Nasi Minyak
ZutatenEin Becher Basmatireis
Zwei Becher Wasser zum dünsten des Reises
1 EL Ghee
Eine Hand voll Cashewkerne
1 Zimtstange
1 Sternanis
4 Kardamomkapseln, das innere davon
1 Schalotte, feingehackt
1 rote Chilli, feingehackt
1 TL Kurkuma
Noch ein Becher Wasser
Eine Hand voll Erbsen
Eine Hand voll frischer Koriander
Salz
Zubereitung
Den Reis mit dem Wasser in einen Topf geben und zum Kochen bringen. Sobald der Reis schön blubbert, den Deckel drauf und die Hitze reduzieren. Für 20 Minuten vor sich hinköcheln lassen.
Wenn man mag, kann man dann nochmal das ganze kurz mit einer Gabel auflockern. Den Reis zur Seite stellen.
Das Ghee in einer anderen Pfanne schmelzen und die Cashewkerne darin rösten. Dann die Cashewkerne aus der Pfanne entfernen.
Da kommt jetzt die Zimtstange, Sternanis und Kardamon rein. Kurz anbraten.
Es folgt die Schalotte, Chilli und Kurkuma. Die Zutaten ein wenig die Hitze schmecken lassen.
Nun kommt der Reis wieder zurück in die Pfanne mit einem Becher Wasser, so dass uns da nicht anpappt.
Wo jetzt nun schon mal alles erhitzt wird, kann man auch gleich die Erbsen hinzugeben und wenn man dann schon fast fertig zum Essen ist, kommen noch die Cashewkerne und der Koriander mit drunter.
Zeit zum Essen. Wie ich schon erwähnte – ja, das habe ich schon gesagt – Nasi Minyak und Hähnchen Rendang zusammen servieren und Spass dabei haben. Lecker!

Wheat Tortillas with Mango Salsa

Sometimes I think I need more of a certain kind of food in my life. Ha, you say, when you look at my blog, there is a lot of variation. Fine! At times, though I wish I could have certain things more often. Maybe something like that ...



That was the dish for Mexico I totally forgot to blog for the World Cup. No worries. Yes, at times I wish I could have a bit more Mexican food in my life.
Well then, what do you have to do for these little wheat tortillas with Mango salsa?
Obviously you need to make your own  wheat tortillas.
For that I usually take normal wheat flour, add a pinch of salt and then as much cream as is necessary to make the dough come together. However, it will never be more than 200 ml of cream. Then I never used more than 500 g of flour.
Let the dough rest a bit, then separate the dough into individual portions, roll out little tortillas and dry-fry them.
Make your Mango Salsa with half a cucumber, a hand full of cherry tomatoes, a bunch of fresh coriander, one ripe mango, the juice of one lime, one red chilli, a small red onion and a bit of salt.
It's best to cut the cucumbers in half lengthwise first. Then remove the softer more watery inside with a small spoon. Cut the remaining part into small cubes.
Remove the seeds of the tomatoes and cut into small bits. Finely chop the onion, chilli and coriander. Cut the mango into small pieces as well.
Mix all the ingredients together. Maybe a drop of olive oil will do no harm.
Put a spoonful of the salsa on each ready fried wheat tortilla and enjoy ...

In the past I was younger, but now ... Vatapa

That's a ridiculous thought! In the past I was younger. Although I know that for sure, I am not quite so sure whether I'm already feeling it. Today at work already half way through, I thought it could be over now, because my energy was gone and yesterday evening I was totally shattered. Somehow, it seems, I can't do the things anymore I was able to do five years ago. Somehow! Ah, that is really ridiculous! There ought to be a different reason for all that.
On the other hand, today, I am able to do things I wasn't able to do five years ago. Something like this ...



That's a Brazilian dish called Vatapa, a stew with fish, prawns, cashews and coconut milk. Fine, I had read something about it a month ago and we already had an entry with this dish for Bloggers Around the World quite at the beginning, but I didn't read anything about it lately.
So today, I just went for it without looking at any recipe, with just the key-thoughts in mind: you have to use fish, prawns, cashews and coconut milk.
Well, I let you know some more details now ...

Ingredients:
Splash of vegetable oil
1 small onion, finely chopped
2 medium sized red peppers, roughly chopped
1 small red chilli
4 small tomatoes, quartered
100 g salmon
100 g prawns
100 g cashew nuts, roasted and salted
165 ml coconut milk
150 ml water
3 spring onions, chopped up
A hand full of chopped fresh coriander
Salt and pepper

Method:
First heat up a sufficiently large pan with the vegetable oil and start with the chopped up onion in it until those pieces go soft. Try not to cry while chopping the onion, though.
Good, if you want to serve the dish with rice, it might take as long from this point on as it takes to prepare steamed rice, at least in the way I use to do it.
Back to the pan, we add the red peppers, chilli and tomatoes. Cook for a few minutes, so the vegetables start to soften up a bit, but we still want to have some crunch on those peppers in the end.
Time for the fish, prawns, cashews, coconut milk and water to join. Bring everything to the boil and let it all simmer for 10-15 minutes. If you want to reduce it more, increase the time, but then the rice will already be ready before you are finished (that shouldn't be any problem) or the peppers might go to soft. Choose for yourself, what you like.
Just before you are finished, check the taste and adjust the seasoning with salt and pepper, if you have to.
Now add the spring onions and chopped coriander. It's time to serve, it's time to eat, it's time to enjoy. I did!



I would say now, this dish is for the World Cup Bloggers Around the World as Brazil is playing Germany today. For Germany I only have some beer in the fridge. No, I don't think the colours of the labels have any meaning as to the German flag, although on this photo it might look like it. 



I might try the left one of them later today. It's called Marc's Chocolate Bock. That sounds intriguing. I would never have thought about buying those beers would it not have been for a 20 % discount at the shop due to the World Cup. This 20 % was on any kind of beer. So people were really pushing out beer from the shop in truck loads.
Anyway, I will see whether that beer was worth its cost. After all one of my workmates recommended it to me. He knows a lot more about beer than I do, but then on the other hand, everyone has to find out for himself, what he likes or not.



Enough about beer! I am not going to do any advertisement for beer here right now. No one asked me to and I have no time for it now.

Well, I also want to add this post to the No Waste Food Challenge. I wouldn't want to miss that one this month. This month Anne from Anne's Kitchen is hosting on behalf of Elizabeth from Elizabeth's Kitchen Diary. After all I saved those red peppers from annihilation as they were far too advanced toward that direction already. Good, it was time for the prawns, too as they were freezing away in the freezer already.



As a conclusion ... I might not be 20 anymore, but since then I have learned a lot and I don't want to trade in this experience ...
