At some point I had bought some udon noodles. They have this lovely package, where you have these nice little portions inside with a small ribbon around. Anyway, I had them neglected for a while, so I thought it was time to bring on some Asian flavours.
Apart from a hot pan, you will need the following ...
Ingredients:
Some sesame oil
1 red onion, finely chopped
A small piece of ginger, very finely chopped
1 carrot, chopped into stripes
150 g bean sprouts
4 baby corns, cut even smaller
3 tbsp. soy sauce
Juice of one lemon or lime (whichever you prefer or have)
200 g boiled udon noodles (if you have, the package tells how to cook them)
1 soft boiled egg (if you like and if you can)
1 spring onion, cut into slightly larger pieces
Some fried garlic (from Asian shop or homemade)
1 red chilli, cut into rings
Some fresh coriander
Some toasted sesame seeds
Method:
We start with the sesame oil in the pan. Next up is the red onion, the ginger and the carrot. It shouldn't take too long to soften them.
After that, you add the bean sprouts and baby corns to warm them up as well. Following that comes the soy sauce and the juice of the lemon or lime. Let things go a little bit, but not for too long.
Then carefully add the udon noodles and stir through. Once you have brought them together, you can already plate up. In fact, this is a quick meal.
You can already put things on a plate. Place the boiled egg on the noodles and garnish the whole plate with the spring onion, fried garlic, red chilli, some fresh coriander and the toasted sesame seeds. If you feel happy you can also drip a bit of soy sauce over the egg.
I hope you enjoy it. There are definitely some nice, clean and fresh flavours going on.
Now, if you are lucky, you can cut open the egg and the egg yolk goes running over the noodles.
